Stir-Fried Tofu, Cabbage and Winter Squash

You can never have too many cruciferous vegetables in your diet. This recipe, courtesy of the New York Times, give us one more delicious way to get some cruciferous cabbage in our diet. You should aim to eat cruciferous veggies at least three times a week. This vegetable family includes cabbage, broccoli, brussels sprouts, kale, bok choy, and cauliflower.
Cruciferous vegetables have very powerful phytochemicals which help prevent cancer and have even been shown to fight off cancer growth. In addition to phytochemicals, these veggies are packed with fibre, vitamins and minerals. Broccoli and kale are among the most healthful of the cruciferous family, and here's why:
Per 1 cup: Broccoli- 44 calories, 5g fibre, 200mg Omega 3's, 165% vitamin C, 23% Folic Acid
Kale- 36 calories, 3g fibre,100mg Omega 3's, 71% vitamin C, 137% vitamin A
Like all vegetables, these babies don't have any cholesterol and are low in calories. Which means they're great for your heart, for your waistline and for fighting against disease. A simple stir fry is a quick and flavorful meal that your whole family will enjoy.

I really love broccoli and cauliflower but am still trying to work my way up to liking those other things like kale and Brussels sprouts... I eat them, but they aren't my favourites (yet!).
