Quick and Easy Berry Jam

 

Sometimes I want an easy breakfast that falls somewhere between dry cereal and pancakes.  Well, what I created this morning is it.  I decided toast was the easiest possible thing to make for breakfast, but I wanted it to have a little pazazz.  I didn't have any jelly or jam on hand, but I did have some frozen berries.  The best part about this quick meal is that it is totally scrumptious.  The second best part is that it takes less than 10 minutes to make.  This is another single friendly meal.  If you live solo or with just one other person, you're in luck.  A single serving for me and D is one slice each, this recipe yields enough for 2 or 3 slices of toast.  But I'm confident that all of you brainiacs out there can multiple the ingredients as needed for your household. 

What You'll Need:

Raspberry:

1/4 cup frozen raspberries 

3/4 tsp melted earth balance

3 T maple syrup

Blackberry:

1/4 cup frozen blackberries

1 tsp light coconut milk

2 T maple syrup or agave nectar

 

1/2 cup crushed walnuts

 

How You'll Do It:

Put raspberries and blackberries separately in a small bowl.  Cover with warm water and swoosh around quickly with your fingers to facilitate thawing.  Meanwhile, put walnuts in a small pan over medium high heat to toast. Stir them regularly so they toast evenly for 7 minutes.  Prepare toast in your toaster.

Drain the berries with a colander or with your hand and put them back in the bowl.  With a fork, smash berries and whip together with Earth Balance and syrup (for raspberry) or with light coconut milk and agave (for black berries).  When finished, smear on toast and top with walnuts.

Why You'll Love It:

This is so easy to make for one person or for several. You'll impress everyones taste buds and nobody will believe that you made this tasty spread by yourself in merely a few minutes!  This would be excellent on a scone or biscuit as well and the toasted walnuts really add great flavor dimension.
