Kale Soup
Wednesday, November 19, 2008 at 9:15AM Have you ever tried Kale? It's a dark leafy green and is a few bucks for a large organic bunch. It is beautiful in color (dark green, sometimes with purple veins) and very flavorful! Kale has nutrients that have been shown to reduce the risk of certain cancers, specifically lung, breast, colon, and bladder cancers. Additionally, Kale (like all dark leafy greens) is an EXCELLENT source of calcium.
What You'll Need:
1 large bunch of Kale, about 4 cups dry (this will reduce greatly when cooked)
6 cups water
4 veggie bullion cubes (this takes care of the salt! adding more is too much!)
2 stalks celery, minced
3 large cloves garlic, casually diced
1/4 large yellow onion, casually diced
1/2 tsp cracked white pepper
How You'll Do It:
Heat a large pot on high heat. Add onions, celery, and garlic with about 1/4 cup of water to fat-free saute the veggies. Tear kale away from the stem and break leaves into small pieces. After five minutes, when veggies are translucent, add 6 cups of water and bullion cubes. Dissolve bullion cubes in water and bring back to a boil. Once boiling add kale. Cook for 15 minutes and add pepper. Serve immediately and enjoy!
This soup was so much better than I even expected and D agreed! It was warm, brothy, flavorful, and very very healthful. Next time, I am going to more finely chop my greens instead of casually tearing them. This will become a staple meal in my home.
