Dairy-Free Mac & Cheese 

Photo by Lauren UlmGiving up dairy is one of the most frightening, nonsense, radical, and impossible ideas ever spoken in real life to most Americans. In fact, most people view themselves as quite incapable, too weak, and addicted to even consider doing such a task. I know this for a fact, first hand, because I have personally heard the response "I could NEVER give up cheese" by 99.9% of the people I come in contact with who find out that I live without eating this delicacy. 

It's thanks to recipes like this, found at the gorgeous food blog, Vegan YumYum, that dairy free folks around the world get to enjoy creamy, rich, comforting dishes like the one pictured here.  The full recipe is available here, and you should definitely check it out. You may be surprised that all of the ingredients are quite basic and do not require any sort of magic whatsoever. Gooey noodley goodness can be enjoyed hot off the stove whenever you like without the use of cheese or milk. You can skip the cholesterol, skip the unhealthy fats, and skip the utter without skipping the Mac & Cheese.

I have yet to find a vegan mac and cheese that really suits my tastes... But then again, I haven't tried very many. This definitely looks like a contender- Your photo alone has me drooling! This definitely deserves a try.
