Broccoli Salad

Salads that aren't based on greens are awesome. And OK, salads that are based on greens are awesome too. There is just something I love about a good salad variety that goes beyond the spinach, kale, romaine, watercress, or arugula varieties. Yes, I love my greens. But I am an out-of-the-box type of person and I don't like it when salads are all so often constructed on a bed of greens. What's even worse is when there is barely any veggies accompanying that bed of greens... but that's a different post all together. This salad is completely raw and is quite refreshing. If you want to add a little bit of additional flavor to this salad, mix in a little bit of extra virgin olive oil to your lemon juice for the dressing. A 1:2 ration of oil to lemon should be nice.
This salad is a great starter for a meal. It is filling and gives the palate a nice variety of flavors. This salad is also a perfect side dish for a picnic or to serve at a summer cookout.
Ingredients:
1 large head of broccoli (about three cups chopped)
2 large carrots, shredded
1/2 cucumber, diced
3 large radishes, sliced thinly
juice from 1 lemon
How You'll Do It:
Using a large knife, saw off the florets of the broccoli trying to get small pieces. Trim the ends off of the large stalks of the broccoli. Then trim down the tough outer sides. Once you have the softer inside of the broccoli stalk remaining, slice it into thin 1" matchsticks.
Mix all veggies in a large bowl using your hands until everything is evenly incorporated. Then pour the lemon juice over salad and mix again. Chill and serve.

I agree. I often forget to make salads that aren't greens centered, but I'm always pleased when I do. I'm also a broccoli stalk waster...so I should take this advice about matchsticking it for salads.
