Thank you, and thanks for sharing Missy! =)
I've just been on the lookout for some vegan cooking ideas for my family. I'll bookmark this post!
We used to eat meat twice a day most days, but I've cut that in half this year. I reckon the path to better eating depends on familiarity - we need to have vegan meals we love before we'd be happy cutting down our meat intake even further. There's not been one complaint either since I made this change... except from me, because I like to cook a variety of foods, preferably without a recipe, and I don't feel my repertoire is big enough yet!!
Hey Alison, I'm so glad you've found this article helpful! Just so you know, since cutting out meat I've had so much more variety in my diet than ever before. There're a lot more types of veggies, legumes, and whole grains than there are types of meat! Haha =) I'm sure your fam. won't even notice the increase in tasty veg meals, and good for you guys. Let me know if you end up finding a favorite from this list! Thanks!
What a great list of simple vegan meals. A lot of my friends are intimidated by the mysterious "vegan" food I cook, even though most of the time I use very simple ingredients.
This is also a great list for starting vegans; no-nonsense meals that are easy to cook!
I will link your post at PassiFlora magazine (http://www.passifloramag.com)
As for desserts, my favorite easy vegan dessert is a tofu-based chocolate mousse cake. There are plenty versions of this dish and here is the one I made: http://passifloramag.com/archive/volume-1/recipes/chocolate-mousse/
